The story of Taco Time begins in 1998 in a small family kitchen in Olympia, Washington. Founder Maria Reyes, inspired by her grandmother's cherished recipes, wanted to share the vibrant flavors of authentic Mexican street food with her community. What started as a humble weekend pop-up quickly became the talk of the neighborhood.

By 2003, the first Taco Time restaurant opened its doors on Pacific Avenue. The reception was overwhelming — lines stretched around the block from day one. People weren't just coming for food; they were coming for the experience, the warmth, and the feeling of being part of something special.
